Harvested entirely from the estate vineyards of Thacher Winery. The aromatics are immediately playful, with candied aromatics of peach rings and cherry lifesavers. There are more serious underlying notes: crisp green apple slices, pound cake, and yeast. The palate is all about stone fruit, especially apricot skin. The wine enjoys a refreshing acidity that is bracing, but not harsh. The bubbles are finer and more reserved than the exuberant mousse from our 2019 Pét Nat, but are better integrated, superbly balancing the wine’s acidity while simultaneously lifting it's fruit.
Made in the “Methode Ancestrale”, Pétillant Naturel was the sparkling wine prototype that predated the Champagne Method. The style was never a victim of the pretension of its more famous sibling, although it has become fashionable in wine bars as an affordable, over-delivering alternative to Champagne.
